Chipotle Chicken and Corn Chowder

I’m so happy the seasons are changing because it’s nice to settle in for the night with a hot bowl of soup. We made a batch of this Chipotle Chicken and Corn Chowder (linked here) over the weekend and had leftovers for daysss. Making it was slightly an ordeal just because there are so many ingredients going into it, so it is definitely easier to make on a weekend than after work M-F. This would be the perfect way to use up leftover or even rotisserie chicken from the store. This is definitely a new favorite for us!

(PS I used a hatch pepper because none of the stores near me carry poblano peppers. Came out great, though a jalapeno might work well if you want more of a kick.)
